Vegan Curry Tofu Salad
For lunch today I made vegan curry tofu salad. I saw something similar at Whole Foods one day and just had to recreate it.
I cooked cubed tofu in my grill pan with some oil, curry powder, salt and pepper. In a medium size bowl I combined diced green pepper and onion, chives, sliced carrots, rasins, sliced almonds, curry powder, vegan mayo, salt and pepper.
Once the tofu is done cooking add it to the bowl and mix. I also added some cayenne pepper to up the heat.

I’m not a terribly creative nor adept chef… would someone mind posting ingredient amounts, please? I’ve ruined many a dish by following my grandmother’s sage advice, “just put in a little of [insert spice of the moment] until it tastes good.” I have no concept of this and will use a teaspoon when it really needs a cup, or I’ll use a cup when I should have used a teaspoon. I really love this recipe at Whole Foods, so I’m really keen to try it. THANKS!
