For the past couple of nights as I lay in bed, I’ve been plotting the perfect recipe for LoMein sauce. Tonight I put all of that brainstorming to the test!!

Veg ExpLoMein

stir fry veggies (whatever wets your whistle)
whole wheat spaghetti noodles
low sodium organic vegetable broth
low sodium soy sauce
Ponzu
red curry paste
organic corn meal

The Sauce

Bring the broth, curry paste (as much as you want), soy sauce, ponzu, and corn meal to a low boil. Whisk the ingredients together throughout the heating process. You want it to turn thick enough so that it sticks to the veggies and noodles.

Bring a pot of salted water to a boil and add the noodles. Cook until they’re almost done…keep them al dente.

Sautee your veggies in Extra Virgin Olive Oil. If you want a little spice, add some red pepper flakes.

Combine all ingredients together.

Delicious!
